Spring Crudités Board with White Bean-and-Pea Dip

If you're hosting a party, one no-brainer dish to serve is fresh veggies with a dip. It's a snap to make, and both satisfying and tasty for guests. To create a beautiful crudités board, choose a wide selection of vegetables that have different colors, shapes, and textures. Place each vegetable in several different places on the board.

Ingredients

(15.5-ounce can) cannellini beans, rinsed

c.
frozen peas, thawed
1
small clove garlic
1/3
c.
fresh mint
2
tbsp.
fresh lemon juice
1/4
c.
olive oil
Kosher salt and freshly ground black pepper
Crackers and spring vegetables, for serving
Directions
- Combine beans, peas, garlic, mint, and lemon juice in a food processor. Process until smooth, 1 to 2 minutes. With the machine running, slowly drizzle in oil until combined, about 1 minute. Season with salt and pepper. Serve with crackers and crudités.
